Kalari (Dogri: कलाड़ी or کلاڑی) is a traditional ripened cheese product indigenous to Udhampur of Jammu province of Jammu and Kashmir state of India
 
Kalaris are usually made from cow's or buffalo's milk, though kalaris made from goat's milk are also available, and have a whitish color
 
Traditionally Kalaris are made from raw (uncooked) full fat milk that is separated using soured milk. The solidified part is packed in doonas (small bowls made of leaves) and sun dried. The excess liquid drips down from the semi-porous doonas and rest of the moisture is lost by sun drying. 
 
As the ambient temperature is low and the sun is strong in the mountains, the Kalari becomes dry from outside yet retains moisture from inside. Some times fungus grows on this and gives it a unique flavor. 
 
The taste of kalari prepared in the three regions of the state is different from each other. The Gujjar Bakarwal(Tribals) herders are known to make this cheese. We at Superfoods have given this unique cheese of  Jammu a Mexican twist by introducing  "Kalari Taco"..
 
As we know Taco is a traditional Mexican dish consisting of a small hand-sized corn or wheat tortilla topped with a filling..

Dish : Kaladi Taco

Method of preparation

  1. Heat 2 Kaladi cheese pieces in a Pan till it loses water and gets soft 
  2. Take 1 Malabar Parantha or laccha Parantha 
  3. Drop and Spread Harissa sauce  over it generously 
  4. Drop and spread  Tomato ketchup over the Parantha 
  5. Now put 2 pieces of Kaladi cheese over the Parantha 
  6. Put pinch of salt, onions , coriander leaves , capsicum (optional) , Barbecue Masala(optional)
  7. Fold the Parantha from the middle 
  8. Now melt little butter and shallow fry the stuffed Parantha from all sides (both sides and bottom part) till it gets little brown .
  9. Once it achieves brown color take out the Parantha/Taco, put mayonnaise sauce on the opening and spread it properly and finally  garnish it with coriander .
